PURPOSE: A method for manufacturing wine and brandy using by-products of fruits(apple,pear), ginsengs, or red ginsengs is provided to produce wine and brandy of high quality. CONSTITUTION: A method for manufacturing wine and brandy comprises: a step of preparing apple and red ginseng juice extract and adding water fructose(sugar, stevia); a step of inoculating yeast and fermenting at 26°C for five days; a step of precipitating and filtering and fermenting again at 12°C for 90 days to prepare wine; and a step of distilling the wine at 78°C to prepare brandy. |
