PURPOSE: A producing method of flat pancake stuffing comprising sweet pumpkin is provided to improve the taste and the nutritive value of flat pancake. CONSTITUTION: A producing method of flat pancake stuffing comprising sweet pumpkin comprises the following steps: washing the sweet pumpkin(ST1); cutting the washed sweet pumpkin(ST2); heating the cut sweet pumpkin at 80~110deg C for 3~5minutes(ST3); adding sugar and starch syrup into the firstly heated sweet pumpkin(ST4); secondly heating the mixture at 10~130deg C for 5~8minutes, and crushing the mixture(ST5); and radiating ultraviolet rays for sterilizing the sweet pumpkin(ST6). The stuffing contains nano-silver as an antibacterial agent, and xanthan gum and gluten powder for increasing the viscosity. |
