<P>PROBLEM TO BE SOLVED: To provide a chewable/swallowable fry-like food looking like a fry food when seen by a person who has dysphagia, and soft and smooth when really taken, by clarifying physical properties such as "hardness" or "viscosity", appearance and flavor which are required for the fry-like food fit to be eaten by the person who has dysphagia to eat. <P>SOLUTION: The fry-like food for cooking contains an inner ingredient and a coating material applied to the outer surface of the inner ingredient. The coating material includes: coating liquid consisting mainly of water and/or oil and containing a coating-forming material comprising at least one selected from cereal, protein, raw starch and processed starch; and a granular material. The kinds, the compounding ratio and the physical properties of the components forming the coating material are adjusted so as to set hardness as a rupture stress value of the coating material after steam-cooking processing to be not more than half of hardness as a rupture stress value of fried food. <P>COPYRIGHT: (C)2011,JPO&INPIT |
