PURPOSE: Fermented soybean paste with the diet effect, and a producing method thereof are provided to use benincasa hispida powder, brown rice powder, suaeda asparagoides powder, and blowfish. CONSTITUTION: A producing method of fermented soybean paste with the diet effect comprises the following steps: mixing 0.05~0.1part of freeze-dried benincasa hispida powder by weight, 0.05~0.1part of brown rice powder, and 1part of soybean to mold a soybean block; fermenting the soybean block; inserting salt into water for obtaining salt water with the concentration of 15~25%; inserting 5~10wt% of suaeda asparagoides powder into the salt water; soaking the fermented soybean block into the salt water for 30~90days; removing toxic portions from blowfish, and layering the blowfish flesh without the toxic portions on the bottom of a jar; separating the fermented soybean block from the salt water, and mounting the block on the blowfish flesh before aging for 1year. |
