摘要 FIELD: food industry. ^ SUBSTANCE: group of inventions relates to the manufacturing technique of dietary flour confectionary products for nutrition of diabetes patients. The methods envisage kneading a dough containing a mixture of prime wheat flour, flour produced from other vegetal raw material, salt, soda, yolks, vegetable oil, phospholipids and water; dough forming in the shape of sheets, baking, filling preparation, waffle forming from sheets and filling. In the process of dough kneading one uses a mixture of prime wheat flour and flour of girasol-sunflower at a weight ratio of 5:1 - 13:1. Flour of girasol-sunflower is prepared by way of its preparation, cutting, drying in microwave field till residual moisture content is about 20% at microwave field power providing for warming girasol-sunflower inside the bits to a temperature of 80-90C during at least 1 hour, frying and cryomilling in liquid nitrogen to produce flour. Dough is prepared at the following mass ratio of components with accuracy of 5%: flour mix - 100, yolks - 8.24, vegetable oil 2.33, phospholipids - 0.45, soda - 0.5, water - to moisture of 58-65%. One produces filling by way of mixing fat, "Sladex" sweetener, flour and waffle crumb. The components weight ratio is chosen respectively from among 60, 0.01, 16, 25 with accuracy of 2%. To make filling, cooking fat is used, as well as scorzonera or oyster plant or dandelion roots flour. Flour is prepared by way of basil extraction with liquid nitrogen to separate corresponding miscella, preparation of scorzonera or oyster plant or dandelion roots, cutting, drying in microwave field providing for warming until temperature inside pieces makes 80-90C for at least 1 hour, frying, impregnation with separated micelle with extract content of 0.02% from the raw material weight with simultaneous increase of pressure, pressure reduction down to atmospheric value with simultaneous freezing of the raw material and its cryo-grinding in medium of released nitrogen to produce flour. ^ EFFECT: produced diabetic waffles have improved consistency, coffee taste and flavour with no coffee added to the formula. ^ 3 cl
