摘要 PURPOSE: Producing methods of rice cake for sliced rice cake soup and rice cake for stir-fried rice cake using yellow dried pollack are provided to use yellow dried pollack powder obtained by a hot water extraction process and an enzymolysis process for producing the rice cake. CONSTITUTION: A producing method of rice cake for stir-fried rice cake using yellow dried pollack comprises the following steps: condensing a hot water extract o f the yellow dried pollack obtained by hot water extracting yellow dried pollack with purified water, for obtaining a yellow dried pollack concentrate; adding protease into pollack residues to obtain a yellow dried pollack enzyme hydrolysate, and concentrating to obtain an enzyme-hydrolyzed yellow dried pollack concentrate; freeze-drying the residue from the previous steps to obtain pollack enzymolysis residue powder; and mixing all the obtained ingredients with non-glutinous rice to produce the rice cake.
