In the production of enzymes of microbiological origin, microbes are introduced into a solid or semi-solid culture medium made absorbent by means of a distending agent, and the medium is maintained in a condition for producing their growth. The culture medium may be prepared by making a dough or batter of flour(s), a nutrient and a distending agent e.g. yeast, which also acts as the nutrient, or baking powder or ammonium carbonate. The medium, which may be heat-sterilized, may also contain materials such as glass wool, asbestos, cellulosic material. Inorganic nutrients, e.g. nitrates may be present. A suitable apparatus consists of a casing a in which is disposed an endless open wirework conveyer f carrying the dough. Air moistened by bubbling through heated water in vessel i is passed into the chamber through pipe g.
