The invention relates to a heat exchange method comprising the boiling of a polar liquid on a surface having at least one low-wetting area, consisting in: (a) generating the appearance of beads of steam on the low-wetting area and allowing said beads to grow; and (b) turning said surface into a wetting surface using at least one electrowetting system in order to promote the detachment of the gas bubbles thus formed.
