摘要 <P>PROBLEM TO BE SOLVED: To provide a roasted wheat flour composition for fry food enabling production of very crispy fry food having crunchy palate feeling and crispy texture and causing little deterioration with time. <P>SOLUTION: The roasted wheat flour composition for fry food is obtained by mixing wheat flour with starch so that the ratio of the wheat flour to the starch is from (80:20) to (20:80), and roasting the mixture.
