A method of producing the flakes comprises soaking the chick peas for 10-12 hours 4, cooking or heating the chickpeas 6, compressing the chickpeas 8, drying the flattened chickpeas 10 and cooling them 12 to form the final flake. The compression step can be carried out by a mechanical press or a roller; the flakes may be dried in an oven or drum dryer. The chickpea or gram flakes are suitable for use in a breakfast cereal or snack.
