摘要 FIELD: food industry. ^ SUBSTANCE: group of inventions relates to the manufacturing technique of dietary flour confectionary products for nutrition of diabetes patients. The methods involve preparation of the recipe components, cutting of yacon, its drying in the microwave field under the specified process parametres, frying and cryogrinding in liquid nitrogen with the production of flour, making of dough from high-grade wheat flour, yacon flour produced as described above, yolks, salt, soda, vegetable oil, phospholipids and water, its moulding into sheets and baking. Then one performs extraction of extraction of grapefruit peel by liquid nitrogen with separation of the respective miscella, cutting of girasol or girasol-sunflower or yacon or chicory, its drying in the microwave field under specified process parametres, frying, impregnation with the separated miscella with simultaneous increase of pressure. Then follows pressure reduction down to atmospheric value with simultaneous freezing of raw materials and its cryo-grinding in medium of released nitrogen to produce flour. Then one mixes flour with culinary fat, sugar substitute "Sladeks" and waffle crumb to make filling, and making waffles of sheets and filling. ^ EFFECT: diabetic waffles have improved texture, coffee taste and flavour with no coffee added to the formula. ^ 4 cl
