FIELD: food industry. ^ SUBSTANCE: invention relates to food industry, in particular, to a technology for vegetables processing. The method for production of celery root food product envisages celery root preparation, cutting, convection drying until intermediate moisture content, maintenance under pressure sufficient for liquid phase condition of the water at a heating temperature of no lower 100C, depressurisation till atmosphere pressure, additional drying in the microwave field till dry substances content is at least 85%, adding flavouring agents and packaging into a package fabricated of a polymer or combined material in an oxygen-free medium. ^ EFFECT: this invention usage enables manufacture of a new product requiring no culinary treatment, having a unique balanced combination of organoleptic properties of popcorn and vegetable salad. |
