FIELD: food industry. ^ SUBSTANCE: group of inventions relates to manufacturing technique of coffee substitutes. The methods envisage extraction of the vegetable raw material envisaged by the method versions with liquid nitrogen with separation of the corresponding miscella, dandelion roots preparation, cutting, drying in microwave field at specified parametres of the process and frying. Then oat grains are fried, dandelion roots and oat grains are mixed; obtained mixture is impregnated by separated miscella with simultaneous pressure boost till pressure level of nitrogen saturated vapours at impregnation temperature and depressurisation till atmosphere pressure with simultaneous freezing of mixture and its cryomilling in medium of evolved nitrogen. ^ EFFECT: methods make it possible to produce new flavoured coffee drink from non-traditional raw materials. ^ 28 cl |
