FIELD: food industry. ^ SUBSTANCE: invention relates to the manufacturing technique of coffee substitutes. The proposed preparation method includes the following operations. Scorzonera is pre-processed according to the traditional technology. Prepared scorzonera is cut and dried in microwave field at preset process parametres. Then scorzonera and oat grains are fried according to the traditional technology. The fried scorzonera and oat grains are mixed in a weight ratio of 7:3 and undergo cryo-grinding in liquid nitrogen to produce the finished product. ^ EFFECT: invention allows to produce coffee drink from non-traditional raw materials according to wasteless technology. |
