An object of the invention is to provide a uniform emulsion that can be produced with a low energy and does not require classification operation; and provided is a method for producing an emulsion, wherein at least a fluid to be processed that forms continuous phase and a fluid to be processed that forms dispersed phase are mixed in a thin film fluid formed between processing surfaces arranged to be opposite to each other so as to be able to approach to and separate from each other, at least one of which rotates relative to the other, whereby the emulsion having variation coefficient of 0.3 to 30% in a particle size distribution is obtained. |
