<P>PROBLEM TO BE SOLVED: To provide an alternative stabilizer capable of being added before fermentation, preferably before the initial stage of low-temperature sterilization during production of a fermented protein product. <P>SOLUTION: It is necessary to provide the alternative stabilizer capable of being added before fermentation, preferably before the initial stage of low-temperature sterilization during production of the fermented protein product. A process for producing a food product is provided. The process comprises (i) a step of contacting a raw food material with the stabilizer to provide a food intermediate and (ii) a step of fermenting the food intermediate, wherein the stabilizer comprises a depolymerized pectin and the raw food material comprises a protein. <P>COPYRIGHT: (C)2010,JPO&INPIT |
