<P>PROBLEM TO BE SOLVED: To provide a rice cooker which can cook delicious and nutrient-denser rice. Ž<P>SOLUTION: The rice cooker includes a pot 1, a lid 4 covering the opening 1a of the pot 1, a pot heating means 2 heating the pot 1, a temperature measuring means 13 measuring the temperature of the pot 1, a control means 12 to control the amount of heat to be given to the pot heating means 2 on the basis of the temperature of the pot 1, and a pretreatment process especially for unpolished rice as a rice cooking process. In the pretreatment process, the control means 12 controls the pot heating means 2 so as to maintain the temperature of the pot 1 at a low immersion water temperature of 30°C or more and less than 40°C for a second prescribed period of time after maintaining the temperature at a high immersion water temperature of 60°C or more and less than 65°C for a first prescribed period of time. In the pretreatment process, the rice cooker can efficiently increase enzyme activity, promote the generation of a γ-aminobutyric acid, promote the decomposition of proteins and liberation of minerals as well at the same time, increase the quantity of the γ-aminobutyric acid, increase the taste, and increase the quantities of liberated minerals while promoting absorption of water into the unpolished rice.
