摘要 PURPOSE: A making method of bread containing Rubus coreanus is provide to improve flavor and taste of the bread with Rubus coreanus by adding Rubus coreanus into the bread ingredients without chemical additives. CONSTITUTION: A making method of bread containing Rubus coreanus includes the following steps: kneading bread flour 800g, grain 200g, live-yeast 35g with cold water 670g; making dough 200g by fermenting the dough with Rubus coreanus 300g in a fermenting machine for 40 minutes; fermenting the dough for 20 minutes in humidity 80% at a temperature 35°C; fermenting the dough in a long rod shape for 40 minutes; and baking the dough in an oven of 220°C.
