PURPOSE: A method for manufacturing Makkoli(white rice wine) using soybean is provided to improve taste and flavor of the Makkoli and ensure rich nutrition. CONSTITUTION: A method for Makkoli(white rice wine) using soybean comprises: a step of soaking soybean in water; a step of pulverizing the soaked soybean; a step of mixing soybean, rice, or wheat flour and steaming to prepare hard-boiled rice; a step of spreading koji mould and fermenting; a step of inputting water and yeast to the hard-boiled rice and stirring to obtain Distiller's grains; and a step of fermenting the herb-boiled rice, water, and yeast. |
