YEAST STRAIN SACCHAROMYCES CEREVISIAE IMB Y-5031 FOR PRODUCTION OF SHERRY WINE MATERIALS

The invention relates to the yeast strainIMB Y- Y-5031 and can be used at production of sherry wine materials. The mentioned strain firstly was obtained from yeast deposit of spontaneously fermented mash of grapes of variety Aligote (“Soniachna Dolyna”, OJSC). The mentioned strain has high fermentation activity, forms a dense conglomerate deposit, stimulates growth and development of sherry film on wine material and improves the organoleptic properties of prepared sherry wine materials.
