<P>PROBLEM TO BE SOLVED: To provide a technique of detecting the boil-dry of a heater from the outer side of a chamber by the configuration of dissolving the variation of detection by heat leakage to the chamber, in a steam sterilizer for accumulating water at the bottom part of the chamber, heating and evaporating the water by the heater sunk underwater, and sterilizing an object to be sterilized inside the chamber under high temperature steam. Ž<P>SOLUTION: In the steam sterilizer for heating and evaporating the water accumulated at the bottom part of the chamber by the heater disposed at the bottom part of the chamber, a bar-shaped heat conducting member extended passing through the bottom part of the chamber in a vertical direction is provided. The bar-shaped heat conducting member is provided with a heat collecting part attached to the heater on a part inside the chamber and a heat transfer part on a part outside the chamber, and a boil-dry preventing device for sensing the boil-dry temperature of the heater transferred to the heat transfer part and opening the energizing circuit of the heater is attached to the heat transfer part.
