<P>PROBLEM TO BE SOLVED: To provide a method for producing acidic liquid seasoning excellent in mild flavor of soy sauce. <P>SOLUTION: The acidic liquid seasoning is mixed with ≥5% raw soy sauce. The method for producing the acidic liquid seasoning includes mixing a fish shaving extracted solution extracted with 0.5-5% acetic acid aqueous solution of ≥70°C and <100°C, and raw soy sauce, and heat treating the mixed liquid at ≥60°C. <P>COPYRIGHT: (C)2010,JPO&INPIT |
