<P>PROBLEM TO BE SOLVED: To provide a method for stably enriching a large amount of a safe sphingolipid without passing through a complicated process in malted rice that is directly used as a food composition as it is without carrying out an organic solvent extraction, concentration, etc. Ž<P>SOLUTION: The method for enriching a sphingolipid in malted rice comprises producing malted rice in the presence of one or more kinds of inorganic salts selected from the group consisting of a potassium salt, a sodium salt, a magnesium salt, a calcium salt and an iron salt in the production of malted rice by inoculating a steamed raw material for producing malted rice with Aspergillus oryzae and carrying out culture.
