<P>PROBLEM TO BE SOLVED: To provide an apparatus for producing baked confectioneries capable of hygienically forming a thin shell having a uniform thickness by a gas-blowing method without directly touching the pastry. Ž<P>SOLUTION: The baking mold 1 of the baking apparatus is composed of an upper baking mold 2 with a molding cavity 4 having the surface form of one half of a halved baked confectionery and a lower baking mold 2 with a molding cavity 4 having the surface form of the other half of the halved baked confectionery, wherein the upper and the lower molds are connected with each other in a manner stacked above and below. Pastry is supplied to each molding cavity 4 of the upper baking mold 2 and the lower baking mold 3 while transporting the mold 1, bean jam is placed on the pastry in the lower baking mold 2, either one of the upper baking mold 2 and the lower baking mold 3 is rotated to sandwich the bean jam between the pastry of the upper and lower baking molds and the pastry is baked in the baking mold 1. In the baked confectionery producing apparatus having the above function, gas blowing apparatuses for applying gas flow to the pastry supplied to the molding cavity 4 and spreading the pastry to a thin shell are placed above the upper baking mold 2 and the lower baking mold 3 at positions moved after supplying the pastry to the molding cavities 4.
