<P>PROBLEM TO BE SOLVED: To produce an eggplant tea making the best use of a powerful medicinal ingredient in eggplant rinds, as a result of repeated keen studies on eggplant rind utilization method through paying attention to the above medicinal ingredient in eggplant rinds, and also in view of the current status that, although eggplant rinds are rich in nasunine and deemed to have a high antioxidant effect, most of such eggplant rinds have been discarded. <P>SOLUTION: The eggplant tea making the best use of the medicinal ingredient in eggplant rinds is produced by the following procedure: in a first step, eggplant rinds are impregnated with ascorbic acid to reduce the loss of nasunine or chlorogenic acid as the active ingredient in eggplant rinds; and in a second step, trehalose and sodium ascorbate are added to the resultant eggplant rinds followed by drying to 8 wt.% or less in moisture content. <P>COPYRIGHT: (C)2010,JPO&INPIT |
