FIELD: food industry. ^ SUBSTANCE: invention relates to pasta production, namely to pasta production of raw materials not containing gluten proteins such as corn, rice, millet, barley-based flour or starch. Method includes following stages: a) preparation of raw materials dry mixture; b) dosing of water into raw materials dry mixture with simultaneous moving of these raw materials thus dough preparation, c) dosing of vapour into dough with simultaneous moving of dough; d) forming of thus obtained dough in certain figures; e) drying of formed figures into pasta. ^ EFFECT: invention allows to perform production method with economic power balance. ^ 44 cl, 2 dwg, 1 tbl |
