A manufacturing method of seasoning composition for soup of puffer fish is provided to mix sodium 5'-inosinate for tuna taste, sodium 5'-guanylate for shiitake taste, monosodium L-glutamate for kelp taste, and monosodium succinate for shell fish taste, thereby improving taste of puffer fish soup. Seasoning composition for soup of puffer fish comprises sodium 5'-inosinate powder 0.12wt%, sodium 5'-guanylate powder 0.08wt%, monosodium L-glutamate powder 0.14wt%, monosodium succinate powder 0.25~0.5wt%, aspartic acid sodium salt powder, 0.1~0.3wt%, sodium tripolyphosphate powder 0.1~0.2wt%, refined salt 5~6wt%, L-theanine powder 0.5~0.8wt%, glucose powder 2~3wt%, and vanillin powder or maltol powder. The refined salt can be replaced with sodium DL-malate powder 5~ 8wt%. |
