摘要 A method for producing spread with filler includes receiving and primary treatment of raw material, preparation of an emulsion with normalizing and stabilizing system, pasteurization, transformation of the mixture into a spread, packaging. According to the invention as normalizing and stabilizing system the mixture of skimmed milk powder and rice extrudate, grounded to the state of a meal, is used in the ratio of 1:2, which is subject to swelling in water with temperature 35-40 °С, then it is pasteurized under the temperature 85-95 °С for 8-12 min. with following cooling to 18-20 °С. A base of emulsion comprises sweet cream unsalted butter Selianske, a vegetable fat, an emulsifier, an aromatizer. The technical result of the method is in possibility to produce end product with homogenous plastic consistence, improved moisture distribution and prevention of exudation thereof on the surface of the block. Food and biological value of the end product is increased due to enrichment thereof with nutritive and biologically-active substances.
