Knife-cut noodles with soybean soup and a preparation method thereof are provided to show specific taste and scent of beans and to enable a consumer to easily take nutrient components of the beans. A method for preparing knife-cut noodles with soybean soup comprises the following steps of: kneading 100 parts of soybean flour, 50-100 parts of flour, 30-60 parts of potato powder, 15-30 parts of buckwheat, 7-15 parts of corn flour and water; knife-cutting the dough to make noodles; preparing vegetable juice materials consisting of Pleurotus eryngii, Lentinus edodes, Agaricus bisporus, carrot, Korean leek, squash, onion, ginger, garlic and cayenne pepper; preparing seafood juice materials containing abalone, octopus, oyster, shrimp, sea mussel, Meretrix lusoria and Artina pectinata; successively inputting the prepared vegetable juice materials and seafood juice materials into boiling water to prepare juice; and inputting the knife-cut noodles into the prepared juice and boiling the knife-cut noodles.
