Sliced raw fish muchim (vegetables seasoned with vinegar and other condiments), and a method for preparing the sliced raw fish muchim are provided to inhibit the softening of fish as time passes. Sliced raw fish muchim is prepared by (10) removing scales from fish; (20) heat treating the surface at 600-900 deg.C or 1-4 sec; (30) dipping the fish in cool water of 0-5 deg.C for 1-3 sec to cool it rapidly; (40) removing the water of the surface of the cooled fish; (50) slicing the fish; and (60) mixing the sliced fish with a seasoning material. |
