The invention relates to the use of at least one type of water-dispersible carotinoid nanoparticles as taste modulators in material compositions; to a method for taste modulation of material compositions, according to which at least one type of water-dispersible carotinoid nanoparticles is added to material compositions; and to taste modulators for material compositions, containing (A) at least one type of water-dispersible carotinoid nanoparticles, and (B) at least one azo compound containing at least one azo group.
