A method and apparatus for the centralized processing and distribution of perishable food products is disclosed. The method includes the steps of: processing meat primals into retail products, storing the retail products in a storage facility for a predetermined period of time, then selecting and transporting the stored retail products to a remote retail outlet in cabinet ready form.
