COOLING METHOD AND COOLING APPARATUS

A cooling method and a cooling apparatus are provided to maintain the temperature of an accepted article by successively cooling accepted articles according to a plurality of cooling temperatures. A cooling method comprises: a first cooling step(S11) cooling an accepted article at first cooling temperature; a second cooling step(S12,S14) supercooling the accepted article at second cooling temperature below the zone of maximum ice crystal formation of the accepted article lower than the first cooling temperature; and a step(S15,S17) canceling the supercooling state of the accepted article. The first cooling step is repetitively performed until the inner temperature of the accepted article becomes below the standard variation to the first cooling temperature.
