FIELD: food production process. ^ SUBSTANCE: lemons are sliced, blanched and crushed. Green vegetables are frozen and crushed. Pike perch fillet is crushed. Crushing is done by way of mincing. The above-mentioned ingredients are mixed with fish broth, culinary salt and CO2-extracts of hot black pepper and laurel lea. The resultant mixture is packaged in aluminium tubes, vacuum-sealed and sterilised. ^ EFFECT: improved digestibility of preserve foods (digestibility value = 5,8.104). |
