摘要 The present invention describes the method for production of fresh, cooked and aged meat and fish products lycopen-enriched by means of addition of dry and ground tomato peel, sourced from the subproduct of the tomato derivatives production industry and from the agricultural surplus of fresh tomato production. In all cases the sensory features of the product obtained are acceptable and do not condition consumption thereof. The context of the invention is the sector of foods enriched with bioactive compounds and it is also useful in reduced calorie intake or low-fat products.
