<P>PROBLEM TO BE SOLVED: To provide a flavorful foaming material enabling stably obtaining high-quality foam of a large volume in food industry, to provide a foamed product, and to provide a food using the foamed product. <P>SOLUTION: This foaming material has as active ingredient, modified dried albumen which has a pH of 9.5 or higher, and carbon dioxide concentration of 1% or lower in a vial of 250 mL volume, after 25g of a product is sealed in the vial, followed by preserving at 75°C for 24 h. <P>COPYRIGHT: (C)2009,JPO&INPIT |
