The present invention relates to a meat-based food product in particular a pork meat sausage and a procedure therefore. Particularly, the present invention relates to a procedure for preparing a meat-based food product, comprising the following operative steps: a) subjecting said meat to tenderising; b) subjecting said tenderised meat to dicing; c) subjecting said diced meat to churning and simultaneous marinating with brine; d) kneading said diced meat, after churning and marinating, with minced meat; e) bagging said mixture obtained according to step d) in a non-transpirant impermeable casing; f) cooking the sausage obtained according to step e) in an oven, as well as the food product thus obtained. |
