<P>PROBLEM TO BE SOLVED: To economically produce arachidonic acid and to provide a food formulated with the same. <P>SOLUTION: Mortierella sect. schmuckeri microorganisms are cultured in fermentation medium, preferably containing a component of a complex nitrogen source. The arachidonic acid is important as a precursor of eicosanoid which is a nutrient for infant, and a food product which includes Mortierella sect. schmuckeri microorganisms or lipid isolated from such microorganisms to enhance the arachidonic acid content of the food product for infant is produced. <P>COPYRIGHT: (C)2008,JPO&INPIT |
