<P>PROBLEM TO BE SOLVED: To provide zinc yeast excellent in zinc absorbability in vivo following intake, and rich in such zinc excellent in absorbability in vivo, and to provide a method for producing the zinc yeast. <P>SOLUTION: The method for producing the zinc yeast comprises the first step of culturing and proliferating yeast in a first liquid material incorporated with a water-soluble zinc to impart the yeast with zinc tolerance and the second step of treating the resultant yeast in a second liquid material incorporated with the water-soluble zinc in higher concentrations than the case with the first step.
