A kimchi seasoning containing Hwangtae(dried Alaska pollack) broth and Hwangtae kimchi prepared by using the seasoning are provided to produce kimchi excellent in taste and nutrition and extend the shelf life of kimchi. A kimchi seasoning containing Hwangtae broth comprises: 35.0~37.0wt% of Hwangtae broth, 2.5~3.0wt% of leek, 4.2~4.5wt% of garlic, 3.0~3.5wt% of Korean leek, 1.8~2.0wt% of onion, 25.0~29.0wt% of radish, 1.0~1.2wt% of ginger, 10.5~11.0wt% of red pepper powder, 1.0~1.3wt% of salt, 2.5~2.9wt% of sugar, and 8.0~12.0wt% of paste. Hwangtae kimchi is prepared by the steps of: mixing the kimchi seasoning containing Hwangtae broth and salted Chinese cabbage in a weight ratio of 55~60:100; and firstly aging the mixture at room temperature for 8~20hr, followed by secondly aging at 3~5°C for 5~6weeks.
