A fish processing machine using water pressure is provided to allow clean and complete removal of guts and bones of fish without remainders using water pressure and to save working time by removing a need of additional washing step. A fish processing machine using water pressure comprises: an inlet box(20) having an inlet(22) into which fish are inserted; a water pressure cutter(50) to cut fish and to remove their guts and bones; an upper guide pathway(30) and a lower guide pathway(40) which are established between the water pressure cutter and the inlet box and constitute a transfer pathway of fish; and a pair of conveyor belt to provide transferring force of fish.
