A method of controlling the internal temperature of a Kimchi refrigerator is provided to lower the internal temperature of initial Kimchi quickly and prevent over-ripening of Kimchi. In a method for controlling the internal temperature of a Kimchi refrigerator capable of quickly lowering the initial internal temperature of a storage room when an operation mode is selected, a compressor is started to a load of a lower limit value of a newly-set cooling control by newly setting the cooling control lower limit value when a preset maintaining time is passed before the internal temperature reaches the cooling control lower limit value of the operation mode after the compressor is started.
