A product of enzymatic galactomannan decomposition which is excellent in quality including storage stability and has a desired average molecular weight and a desired viscosity is efficiently obtained without fail. The production process includes the following first to third steps. In the first step (S10), the albumen part of seeds of a leguminous plant which contain galactomannan is enzymatically hydrolyzed in an acid region with a hemicellulase reagent. In the subsequent second step (S20), the hydrolysis reaction of the solution obtained through the first step is stopped. In the third step (S30 to S60), the solution after the second step is subjected to centrifugal separation to remove unreacted substances, and the residue is purified, thermally sterilized, cooled, and then neutralized.
