<P>PROBLEM TO BE SOLVED: To provide a method for producing bittern for producing bean curd which is suitable for producing excellent bean curd having both of flavor and taste of soybean when using salt-farm bittern as a coagulant in production of the bean curd, and smooth palate feeling when using GDL as a coagulant in the production of the bean curd, wherein a coagulation rate can be controlled. <P>SOLUTION: The method for producing bittern for producing bean curd comprises the following process: boiling up brine obtained by concentrating intake seawater through an ion exchange membrane process to be concentrated so as to deposit sodium chloride falling in the brine before concentrated and deposit CaSO<SB>4</SB>falling in the brine before concentrated; separating NaCl and CaSO<SB>4</SB>which are deposited from the concentrated brine; cooling the residual liquid to around normal temperature to separate KC1 as coarse bittern; admixing MgC1<SB>2</SB>water solution to the separated coarse bittern to prepare bittern for producing bean curd. <P>COPYRIGHT: (C)2008,JPO&INPIT |
