A process for the melting, cleansing, and /or deaeration of honey and the like comprises adding to the substance the distillate obtained by the vacuum evaporation of already melted and cleansed substance, stirring the mixture for a few hours at a temperature which does not cause damage to the substance, for example not above 46‹C., straining the resulting solution, and then subjecting the solution to a vacuum of for example 40 Torr, for example in a film evaporator, to distill of so much distillate that the water content of the substance is restored to its original level. |
