摘要 PROBLEM TO BE SOLVED: To provide fermented tea leaves containing a large amount of lactic acid which cannot be imaged in conventional fermented tea leaves while using a conventional fermented tea producing method. SOLUTION: The fermented tea leaves which contain≥3.5 g lactic acid per 100 g tea leaves are stably produced by steaming tea leaves followed by natural fermentation, pickling the tea leaves in a barrel in a condition of blocking air, and lactic fermenting the product followed by drying.
