<P>PROBLEM TO BE SOLVED: To provide a method for producing a casein hydrolyzate extensively usable as a foodstuff material and abundantly containing glutamine and glutamic acid. <P>SOLUTION: A raw material solution containing casein is hydrolyzed with either an enzyme group A consisting of Bacillus bacteria-derived endoprotease and trypsin or an enzyme group B consisting of Bacillus bacteria-derived endoprotease and trypsin and lactobacteria-derived peptidase; the resultant hydrolyzate liquid is subjected to an ultrafiltration membrane treatment; and the resultant membrane-permeated fraction is subjected to nanofiltration membrane treatment, thus giving a casein hydrolyzate as a non-membrane-permeating fraction. <P>COPYRIGHT: (C)2007,JPO&INPIT |
