An apparatus for controlling drying of a dish washer and a method thereof are provided to improve the drying efficiency regardless of the condition and amount of the dishes by sensing moisture in the product and controlling the drying time, and to reduce power consumption by stopping the driving of the fan motor in advance when the drying is finished earlier than the set condition. An apparatus for controlling drying of a dish washer comprises: a key inlet part(302) for inputting the command desired by a user; a moisture sensing part(301) for sensing the inner moisture; a microcomputer(303) for operating the washing stroke according to the set condition if the auto course is selected through the key inlet part and controlling the variable drying stroke according to the moisture value sensed through the moisture sensing part when the drying stroke is started; and a fan driving part(305) controlling the driving of the blowing fan according to the control signal of the microcomputer. The moisture sensing part is installed at the front end or the rear end of the blowing fan.
