摘要 <p><P>PROBLEM TO BE SOLVED: To provide a method for producing brandy, capable of producing the brandy remarkably having a fruity fragrance specific to a fruit. <P>SOLUTION: This method for producing the brandy comprising crushing a raw material of the fruit, such as a grape, a citrus fruit, a melon, and a pear, rich in the fruity fragrance, then fermenting a part or the whole of the crushed material not subjected to solid-liquid separation by using a yeast at a fermentation temperature of 10-25°C for 3-14 days, and distilling the obtained fermented product under reduced pressure at a temperature of the distillate of 40-55°C, so that the brandy remarkably having the fruity fragrance specific to the fruit is produced. <P>COPYRIGHT: (C)2006,JPO&NCIPI</p>
