<p>A method of producing a liquid phase protein extract from a vegetable protein source, such as soy beans, by extracting soluble protein into an aqueous sodium bisulfite solution, filtering out the spent vegetable protein source to leave an aqueous protein extract, acidifying the aqueous protein to form a discontinuous liquid phase, and centrifuging to separate the phases thereby forming a lower layer of high concentration liquid protein.</p> |
